Ingredients:

  • 2 yellow onions
  • 3 garlic cloves
  • 1 cauliflower
  • 1 lb carrots
  • 1 half stock celery
  • 1-2 cups chicken stock
  • 2 tablespoons curry powder
  • 1 tablespoon cumin powder
  • 1/2-1 tablespoon cayenne powder
  • salt to taste
  • optionally add cream

Instructions:

  1. Get a large pot. 1.5 gallons
  2. Cover the bottom of the pot with 3-4 tbsp olive oil
  3. Large chop onions and add to pot
  4. Cook until sweated or for longer if you want it sweeter
  5. Mince or fine chop garlic and add. cook until fragrant. should only be about a minute
  6. Add chicken stock
  7. Chop carrots, celery, cauliflower
  8. Add vegetables to pot
  9. Fill to cover with water
  10. Cook on simmer until vegetables are soft (about an hour)
  11. Turn off heat and blend soup with a stick blender or a conventional blender
  12. Add curry powder, cumin powder, cayenne powder and about 2 tsp of salt
  13. Optionally you can also add a half cup of cream
