Ingredients:
- 2 yellow onions
- 3 garlic cloves
- 1 cauliflower
- 1 lb carrots
- 1 half stock celery
- 1-2 cups chicken stock
- 2 tablespoons curry powder
- 1 tablespoon cumin powder
- 1/2-1 tablespoon cayenne powder
- salt to taste
- optionally add cream
Instructions:
- Get a large pot. 1.5 gallons
- Cover the bottom of the pot with 3-4 tbsp olive oil
- Large chop onions and add to pot
- Cook until sweated or for longer if you want it sweeter
- Mince or fine chop garlic and add. cook until fragrant. should only be about a minute
- Add chicken stock
- Chop carrots, celery, cauliflower
- Add vegetables to pot
- Fill to cover with water
- Cook on simmer until vegetables are soft (about an hour)
- Turn off heat and blend soup with a stick blender or a conventional blender
- Add curry powder, cumin powder, cayenne powder and about 2 tsp of salt
- Optionally you can also add a half cup of cream
